Ingredients

  • 1 1/2 c Italian-style dried breadcrumbs
  • 1 1/3 c freshly grated Parmesan cheese divided
  • 1 tsp salt
  • 2 16-oz packages mozzarella cheese sticks
  • 4 large eggs beaten
  • 1 1/2 c vegetable oil

Instructions

Prepare the coating mixture.

  • In a medium bowl, combine the breadcrumbs, 1 cup of the Parmesan cheese, and the salt. Mix until evenly blended.

Prepare the mozzarella sticks.

  • Cut each mozzarella cheese stick in half.

Prepare the eggs.

  • Place the beaten eggs in a shallow bowl.

Coat the cheese sticks.

  • Dip each mozzarella piece into the beaten eggs, ensuring it is fully coated. Allow any excess egg to drip back into the bowl.

Bread the cheese sticks.

  • Coat each cheese stick in the breadcrumb mixture, pressing gently so the coating adheres evenly.

Repeat the coating process.

  • Dip each coated cheese stick into the egg again, then return it to the breadcrumb mixture to coat a second time.

Freeze the cheese sticks.

  • Place the coated mozzarella sticks on a baking sheet. Cover and freeze until fully frozen, approximately 2 hours.

Heat the oil.

  • Pour the vegetable oil into a large frying pan and heat it over medium heat.

Fry the mozzarella sticks.

  • Working in batches, fry the cheese sticks until golden brown, about 1 minute per side.

Drain and finish.

  • Transfer the fried mozzarella sticks to plates or a paper towel-lined surface. Sprinkle with the remaining Parmesan cheese.

Serve immediately.

  • Serve while hot.
