Ingredients

  • 8 chicken thighs or assorted pieces from one cut-up chicken
  • 1 small jar apricot preserves
  • 1 package dry French onion soup mix
  • 1 bottle Russian dressing
  • Nonstick cooking spray for preparing the baking pan

Instructions

Prepare the sauce.

  • In a mixing bowl, combine the Russian dressing, dry French onion soup mix, and apricot preserves. Stir until fully combined.

Preheat the oven.

  • Preheat the oven to 400°F.

Prepare the baking pan.

  • Lightly spray a 9 x 13-inch baking pan with nonstick cooking spray.

Arrange the chicken.

  • Place the chicken thighs in the prepared baking pan, leaving space between each piece.

Add the sauce.

  • Pour the prepared sauce mixture evenly over the chicken, ensuring each piece is coated.

Roast the chicken.

  • Place the baking pan in the preheated oven and roast for 1 hour to 1 hour and 15 minutes.

Baste during cooking.

  • Baste the chicken frequently with the sauce from the pan while it roasts to keep the chicken moist and well coated.

Check for doneness.

  • Insert a meat thermometer into the thickest part of the chicken. The chicken is fully cooked when it reaches an internal temperature of 165°F.

Serve.

  • Remove the chicken from the oven and allow it to rest briefly before serving. Spoon additional sauce from the pan over the chicken, if desired.
