Fire-Roasted Tomato Soup Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 1 ½ c diced potatoes
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp tomato paste
  • 2 ½ tsp Italian seasoning
  • 2 tsp red pepper flakes
  • 2 cans fire-roasted tomatoes 14 oz each
  • 2 cans white beans 14 oz each, drained
  • 32 oz vegetable broth
  • ¾ c heavy cream
  • ½ c grated Parmesan cheese

Instructions

Step 1: Sauté the Onion and Potatoes

  • In a large Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion and diced potatoes.
  • Cook for 3 to 4 minutes, stirring occasionally, until the onion begins to soften.

Step 2: Add the Garlic

  • Add the minced garlic to the Dutch oven.
  • Continue cooking, stirring frequently, until the garlic is fragrant and the potatoes begin to soften.

Step 3: Add the Tomato Paste and Seasonings

  • Add the tomato paste, Italian seasoning, and red pepper flakes.
  • Cook for an additional 5 minutes, stirring often to prevent sticking.

Step 4: Add the Tomatoes, Beans, and Broth

  • Pour in the fire-roasted tomatoes with their juices.
  • Add the drained white beans and vegetable broth.
  • Stir until all ingredients are evenly combined.

Step 5: Simmer

  • Reduce the heat to low.
  • Allow the soup to simmer for 20 minutes, or until the potatoes are tender and the flavors have blended.

Step 6: Add the Cream and Parmesan

  • Stir in the heavy cream and grated Parmesan cheese.
  • Mix until the cheese is melted and the soup is fully combined.
  • Season with salt and black pepper to taste.

Step 7: Serve

  • Ladle the soup into bowls.
  • Garnish with additional red pepper flakes, if desired.
  • Serve warm with crusty bread.
