Ingredients

  • 1 1/2 lb lean ground beef

  • 1 red bell pepper diced

  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp paprika
  • 2 tsp Italian seasoning
  • 14 oz diced tomatoes undrained
  • 1 c long grain white rice
  • 1 1/2 c beef broth
  • 8 oz tomato sauce
  • 1 1/2 c Colby Jack cheese shredded and divided
  • parsley for garnish

Instructions

  • Preheat the Oven: Set your oven to 375 degrees Fahrenheit. And prepare a 9x13-inch baking dish. By spraying it with nonstick cooking spray.
  • Brown the Beef: In a large skillet. Heat the olive oil over medium-high heat. Add the ground beef. And cook until it's fully browned.
  • Add Vegetables and Seasonings: To the skillet with the beef. Add the diced onions and bell peppers. Cook for about 5 minutes. Until the vegetables start to soften. Stir in the minced garlic, Worcestershire sauce, salt, black pepper, paprika, and Italian seasoning.
  • Combine Remaining Ingredients: Pour the diced tomatoes (with their juice), beef broth, and tomato sauce. Into the skillet. Add the rice and 1 cup of the shredded cheese. Stir everything together. Until well combined.
  • Bake the Casserole: Transfer the mixture from the skillet. Into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheese over the top. Cover the dish with aluminum foil. And bake in the preheated oven. For about 45 minutes. Or until the rice is cooked through. And the liquid is absorbed.
