Preheat the oven to 400°F / 200°C.
Line a baking sheet with parchment paper.
Remove the stems from the cabbage heads.
Cut each cabbage head in half.
Cut each half in half again to create thick cabbage slices.
Each cabbage slice should be approximately 3/4 to 1 inch thick.
Arrange the cabbage steaks on the prepared baking sheet.
Leave space between each cabbage steak to allow for even roasting.
Brush the top side of each cabbage steak thoroughly with olive oil.
Sprinkle the oiled side evenly with salt, paprika, and garlic powder.
Carefully flip each cabbage steak over.
Brush the second side with olive oil.
Sprinkle the second side evenly with salt, paprika, and garlic powder.
Add a small pinch of red pepper flakes to each cabbage steak, if desired.
Bake for approximately 25 minutes, or until the leaves are browned, the edges are crisp, and the centers are tender.
Remove the cabbage steaks from the oven.
Serve immediately while hot.
