Heat the olive oil in a large frypan over medium-high heat.
Brown the beef mince.
Add the beef mince to the frypan. Cook, breaking it apart with a spoon, until browned and no longer pink.
Add the onion and spinach.
Add the diced onion and optional baby spinach. Cook, stirring occasionally, until the onion has softened and the spinach has wilted.
Add the aromatics and tomato ingredients.
Stir in the crushed garlic, Italian herbs, optional chilli flakes, tomato paste, and crushed tomatoes. Mix until evenly combined with the mince.
Add the liquids and pasta.
Pour in the beef stock and milk. Add the pasta and stir well to combine.
Bring to a boil.
Bring the mixture to a boil, then reduce the heat to medium.
Cook the pasta.
Continue cooking, stirring every few minutes, until the liquid has mostly absorbed and the pasta is cooked al dente. This should take approximately 17 to 25 minutes, depending on the pasta shape.
Adjust the consistency if needed.
If the pasta is not fully cooked and the liquid has absorbed too quickly, add a small amount of additional stock, milk, or water and continue cooking.
Add the cheese.
Scatter the grated cheese over the top of the mince and pasta mixture. Allow the cheese to melt before serving.
Serve immediately.
Serve warm with a fresh salad and crusty garlic bread, if desired.
