Ingredients

  • 2 lb lean ground beef 90/10 or 93/7
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar cheese shredded (or additional sliced cheese)
  • 24 soft dinner rolls two 12-count packages
  • 2 Tbsp unsalted butter melted (plus additional for greasing)
  • 1 Tbsp sesame seeds

Instructions

  • Preheat the oven to 350°F (175°C). Generously grease the bottom of a rimmed baking sheet with butter.
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and ground beef, breaking the meat apart with a spatula. Season with salt, black pepper, and garlic powder. Cook until the beef is fully browned and the onion is softened.
  • Carefully tilt the skillet and remove excess fat. Stir the mayonnaise into the cooked beef mixture until evenly combined. Remove from heat.
  • Slice the dinner rolls horizontally, keeping them connected if possible. Arrange the bottom halves on the prepared baking sheet.
  • Layer the sliced cheddar cheese evenly over the bottom rolls. Spread the beef mixture evenly over the cheese, smoothing the surface with a spatula. Sprinkle the shredded cheddar cheese evenly over the beef.
  • Place the top halves of the rolls over the beef and cheese layers. Brush the tops with melted butter and immediately sprinkle with sesame seeds.
  • Bake uncovered for 12–15 minutes, or until the cheese is fully melted and the tops of the rolls are golden brown.
  • Remove from the oven and allow the sliders to rest for several minutes before slicing and serving.

To make this recipe gluten-free, substitute the dinner rolls with certified gluten-free slider buns or rolls. Confirm that all other ingredients, including mayonnaise, cheese, and seasonings, are labeled gluten-free, as formulations may vary by brand.
