Easy Bacon Fried Rice

Ingredients

  • 6 slices thick-cut bacon chopped
  • 1/2 large onion diced
  • 2 garlic cloves minced
  • 1 c frozen peas and carrots
  • 4 c cooked and cooled long-grain rice preferably day-old
  • 3 large eggs beaten
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 green onions chopped

Instructions

Cook the bacon.

  • Place the chopped bacon in a large cold skillet. Turn the heat to medium and cook until the bacon is crisp.

Drain the bacon.

  • Remove the cooked bacon from the skillet and transfer it to a paper towel-lined plate. Set aside. Leave the bacon drippings in the skillet.

Cook the onion.

  • Add the diced onion to the same skillet. Cook in the bacon drippings for 3 to 5 minutes, or until translucent.

Add the garlic and vegetables.

  • Add the minced garlic and frozen peas and carrots. Sauté for 2 to 3 minutes, or until the vegetables are tender and the garlic is fragrant.

Add the rice.

  • Add the cooked and cooled long-grain rice to the skillet. Stir well to combine with the vegetables and break up any clumps.

Heat the rice.

  • Cook the rice mixture for 2 to 4 minutes, stirring frequently, until heated through.

Scramble the eggs.

  • Push the rice and vegetables to one side of the skillet. Pour the beaten eggs into the empty side of the pan. Scramble until fully cooked.

Combine the eggs with the rice.

  • Stir the cooked eggs into the rice and vegetable mixture until evenly distributed.

Add the sauces and bacon.

  • Increase the heat to high. Add the soy sauce, oyster sauce, sesame oil, and cooked bacon. Stir well until all ingredients are evenly combined.

Season to taste.

  • Add salt and freshly ground black pepper as needed. Taste before adding additional salt, as the bacon, soy sauce, and oyster sauce are already salty.

Finish cooking.

  • Cook for an additional 1 to 2 minutes, stirring frequently, until the fried rice is hot and well coated.

Garnish and serve.

  • Remove from the heat. Garnish with chopped green onions and serve hot.

Notes

To make this Easy Bacon Fried Rice gluten free, use certified gluten-free bacon, gluten-free soy sauce or tamari, and a gluten-free oyster sauce. Verify that the sesame oil, frozen vegetables, and rice are gluten free and free from cross-contact. Use clean cookware, utensils, and prep surfaces to avoid contact with gluten-containing ingredients.
