Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it into small pieces with a spoon as it cooks. Continue cooking until no pink remains.
Add the onion and garlic.
Add the diced onion and minced garlic to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until the onion is translucent and the garlic is fragrant.
Add the bell peppers.
Stir in the chopped bell peppers. Cook for approximately 5 minutes, or until the peppers begin to soften while still retaining some texture.
Add the cauliflower rice.
Add the frozen cauliflower rice directly to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until heated through.
Add the rice, tomatoes, and seasonings.
Stir in the cooked rice, tomato sauce, diced tomatoes, salt, and black pepper. Mix until all ingredients are evenly combined and the rice is fully coated with the tomato mixture.
Simmer the mixture.
Reduce the heat to low. Simmer for approximately 10 minutes, stirring occasionally, until the flavors are well combined and the mixture is heated through.
Add the cheese.
Sprinkle the shredded cheddar cheese evenly over the top of the skillet mixture.
Melt the cheese.
Cover the skillet and continue cooking over low heat until the cheese is fully melted.
Serve.
Remove from heat and serve hot. Garnish with additional cheese or fresh herbs, if desired.
