Ingredients

  • 12 ounces fettuccine pasta
  • ½ rotisserie chicken shredded
  • 6 tablespoons butter
  • 5 garlic cloves minced
  • 4 ounces cream cheese softened
  • 3 ounces parmesan cheese freshly shredded
  • ¾ cup heavy cream
  • Freshly chopped parsley for garnish
  • Freshly ground black pepper to taste

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve approximately ½ cup of pasta cooking water before draining. Drain the pasta and set aside.
  • Shred the rotisserie chicken into bite-sized pieces and set aside.

Prepare the Garlic Butter Base

  • In a large skillet or sauté pan over medium heat, melt the butter. Add the minced garlic and sauté for approximately 1 minute, stirring frequently, until fragrant. Avoid browning the garlic.

Prepare the Alfredo Sauce

  • Reduce the heat to medium-low. Add the cream cheese, shredded parmesan cheese, and heavy cream to the skillet. Whisk continuously until the cheeses have melted and the mixture becomes smooth and creamy.
  • Continue cooking gently, stirring frequently, until the sauce thickens slightly.

Incorporate the Chicken

  • Add the shredded rotisserie chicken to the Alfredo sauce. Stir thoroughly to coat the chicken evenly and allow it to warm through for 2–3 minutes.
  • Season with freshly ground black pepper to taste.

Combine with Pasta

  • Add the drained fettuccine to the skillet. Toss gently until the pasta is fully coated in the sauce.
  • If the sauce appears too thick, add a small amount of the reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.

Garnish and Serve

  • Remove from heat. Sprinkle with freshly chopped parsley and additional parmesan cheese if desired. Serve immediately while warm.
