Ingredients

  • 4 slices bacon cooked and crumbled
  • 6 cups cauliflower florets
  • 3 tsp minced garlic
  • 1/3 cup heavy whipping cream
  • 1 tbsp unsalted whipped butter
  • 1 tbsp chopped chives
  • Salt to taste
  • Ground black pepper to taste
  • 1/4 cup shredded cheddar cheese
  • Chopped green onions for garnish

Instructions

  • Preheat the oven to 350°F.
  • Lightly grease a baking dish and set it aside.
  • Place the cauliflower florets and minced garlic in a pot of water.
  • Bring the water to a boil over medium-high heat.
  • Continue boiling for approximately 15 minutes, or until the cauliflower is tender.
  • Drain the cauliflower and garlic thoroughly to remove excess moisture.
  • Transfer the drained cauliflower and garlic to a blender or food processor.
  • Add the heavy whipping cream, unsalted whipped butter, chopped chives, salt, and ground black pepper.
  • Blend until the mixture is well combined but still slightly chunky.
  • Spread the cauliflower mixture evenly into the prepared baking dish.
  • Sprinkle the cooked and crumbled bacon evenly over the cauliflower mixture.
  • Add the shredded cheddar cheese evenly over the top.
  • Place the baking dish in the preheated oven.
  • Bake for approximately 5 minutes, or until the cheese is fully melted.
  • Remove the baking dish from the oven.
  • Garnish with chopped green onions.
  • Serve warm as a side dish or light main course.
