Ingredients

  • 16 oz frozen shredded hash brown potatoes
  • 16 oz sour cream
  • 10.5 oz cream of chicken soup
  • 4 tbsp unsalted butter melted
  • 1 oz ranch seasoning
  • 2 cups cooked and shredded chicken
  • 1 cup cooked and crumbled bacon divided
  • 2 ½ cups shredded cheddar cheese divided

Instructions

Preheat the oven.

  • Preheat the oven to 350°F. Prepare a 9x13-inch baking dish with nonstick cooking spray and set aside.

Combine the casserole mixture.

  • In a large mixing bowl, combine the frozen shredded hash brown potatoes, sour cream, cream of chicken soup, melted unsalted butter, ranch seasoning, cooked shredded chicken, ¾ cup cooked crumbled bacon, and 2 cups shredded cheddar cheese.

Mix until evenly incorporated.

  • Stir the ingredients thoroughly until the hash browns, chicken, bacon, cheese, and creamy mixture are evenly distributed.

Transfer to the baking dish.

  • Spoon the mixture into the prepared 9x13-inch baking dish. Spread it into an even layer.

Add the topping.

  • Sprinkle the remaining ¼ cup cooked crumbled bacon and remaining ½ cup shredded cheddar cheese evenly over the top of the casserole.

Bake the casserole.

  • Bake for 40 to 45 minutes, or until the casserole is heated throughout and the cheese on top is melted.

Rest before serving.

  • Remove the casserole from the oven and allow it to rest for 5 minutes before serving.

Serve warm.

  • Serve the casserole warm as a main dish with desired side dishes.

Notes

To make this recipe gluten-free, use certified gluten-free frozen shredded hash brown potatoes.
Select a gluten-free cream of chicken soup, as many canned varieties contain wheat-based thickeners.
