Ingredients

  • 6 large eggs
  • 4 slices bacon cooked and finely chopped
  • 1 c cottage cheese
  • 1 c shredded Gruyere cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Prepare the Oven and Muffin Tin

  • Preheat the oven to 350 degrees F. Generously coat a 12-cup muffin tin with non-stick cooking spray.

Blend the Egg Mixture

  • In a blender, combine the eggs, cottage cheese, salt, and black pepper. Blend until the mixture is completely smooth.

Add the Gruyere

  • Pour the blended egg mixture into a mixing bowl. Stir in the shredded Gruyere cheese until evenly combined.

Fill the Muffin Tin

  • Divide the egg mixture evenly among the prepared muffin cups, filling each cup approximately two-thirds full. Leave room at the top, as the egg mixture will rise during baking.

Add the Bacon

  • Sprinkle the chopped bacon evenly over the tops of the egg mixture. Gently press the bacon into each cup with a spoon so it is slightly submerged.

Bake

  • Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the egg bites are fully set in the center.

Rest and Remove

  • Remove the muffin tin from the oven and allow the egg bites to rest for 5 to 10 minutes. Carefully loosen each egg bite with a spoon and remove from the pan.

Serve

  • Serve warm and enjoy.
