Ingredients

  • Brioche or challah bread 240 g / 8.5 oz: Provides a rich texture that absorbs the custard beautifully.
  • Eggs 200 g / 7 oz: Bind ingredients and create a soft, custardy interior.
  • Whole milk 240 g / 8.5 oz: Adds creaminess and helps the custard soak evenly.
  • Brown sugar 50 g / 1.8 oz: Sweetens and adds depth of flavor.
  • Ground cinnamon 5 g / 0.18 oz: Infuses warmth and signature spice notes.
  • Apples thinly sliced (200 g / 7 oz): Bring fruity freshness and light tartness that complement sweetness.
  • Butter 30 g / 1 oz: Used for sautéing apples and greasing the skillet, adding richness.
  • Vanilla extract 5 g / 0.18 oz: Provides aroma and subtle sweetness.
  • Pinch of salt 1 g / 0.03 oz: Balances flavor and enhances overall taste.
  • Key ingredients for cinnamon apple french toast ready to mix.

Instructions

  • In a shallow bowl, whisk together eggs, milk, brown sugar, cinnamon, vanilla, and salt until fully combined.
  • Preheat a medium skillet over medium heat and melt a small portion of the butter.
  • Add apple slices and sauté until slightly softened and caramelized, about 5 minutes; then set aside.
  • Dip each slice of bread into the egg mixture, letting it soak briefly without becoming soggy.
  • Cook the soaked bread in a buttered pan for 2–3 minutes per side, turning until golden brown and crisp at the edges.
  • Top the cooked toast with the warm apples and any pan juices; optionally sprinkle more cinnamon on top.
  • Serve immediately with maple syrup or a dusting of powdered sugar.

Notes

Substitute oat milk or almond milk for a lighter twist, or use coconut sugar instead of brown sugar for a subtle caramel note.
To make ahead, prepare the apple topping a day earlier and refrigerate; reheat gently when serving. Additionally, keep cooked slices warm in a 90°C (200°F) oven.
Store leftovers in an airtight container for up to two days. Reheat in a toaster oven so your cinnamon apple french toast stays crisp instead of soggy.
For extra protein, whisk in a tablespoon of Greek yogurt into the batter for added richness and better browning.
If cooking in batches, lightly butter the pan between rounds to maintain consistent color and flavor.
