Add the extra virgin olive oil to a large pot.
Place the pot over medium heat and allow the oil to warm.
Add the chopped sweet onion to the pot.
Sauté the onion for 3 to 5 minutes, or until softened.
Add the chopped red bell pepper, sliced carrots, and minced garlic.
Continue to sauté for an additional 3 to 5 minutes, stirring occasionally.
Place the whole boneless skinless chicken breasts into the pot.
Add the dried thyme or fresh thyme, crushed red pepper, salt, and ground black pepper.
Pour the chicken broth into the pot.
Increase the heat and bring the mixture to a boil.
Once boiling, reduce the heat to a simmer.
Simmer for approximately 15 minutes, or until the chicken is fully cooked.
Remove the cooked chicken breasts from the pot and transfer them to a cutting board.
Dice the chicken into bite-sized pieces.
Return the diced chicken to the pot.
Stir the cheese tortellini into the simmering broth.
Continue to simmer for 10 to 15 minutes, or until the tortellini is tender.
Stir in the heavy cream.
Add the packed frozen spinach or fresh baby spinach leaves.
Stir in the chopped fresh parsley.
Continue cooking briefly until the spinach is wilted and the soup is heated through.
Taste the soup and adjust the seasoning with additional salt and ground black pepper, if needed.
Ladle the soup into serving bowls.
Serve warm.
