Chicken Stuffed Jalapeños are made with fresh jalapeños filled with a creamy mixture of shredded chicken, cream cheese, shredded cheese, salsa, and warm spices, then baked until tender and lightly golden.
Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and set aside.
Prepare the Jalapeños
Slice the jalapeños lengthwise and remove the seeds and membranes. Arrange them cut-side up on the prepared baking sheet.
Prepare the Filling
In a medium bowl, combine the cream cheese, shredded cheese, salsa, ground cumin, salt, and optional chili seasoning. Mix until smooth and evenly combined.
Add the Chicken
Gently fold the shredded chicken into the cheese mixture until fully incorporated.
Stuff the Jalapeños
Spoon approximately 1 teaspoon of the filling into each jalapeño half, filling evenly without overfilling.
Bake
Bake for 20 minutes, or until the jalapeños are tender and the filling is hot and lightly golden.
Serve
Remove from the oven and allow to cool slightly before serving.
