Ingredients

  • ¼ tsp salt
  • 12 medium jalapeños halved lengthwise and seeded
  • tsp chili seasoning optional
  • 1 cup cooked chicken shredded
  • tsp ground cumin
  • 2 tsp salsa
  • 1 cup shredded cheese
  • 4 oz cream cheese softened

Instructions

Prepare the Oven

  • Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and set aside.

Prepare the Jalapeños

  • Slice the jalapeños lengthwise and remove the seeds and membranes. Arrange them cut-side up on the prepared baking sheet.

Prepare the Filling

  • In a medium bowl, combine the cream cheese, shredded cheese, salsa, ground cumin, salt, and optional chili seasoning. Mix until smooth and evenly combined.

Add the Chicken

  • Gently fold the shredded chicken into the cheese mixture until fully incorporated.

Stuff the Jalapeños

  • Spoon approximately 1 teaspoon of the filling into each jalapeño half, filling evenly without overfilling.

Bake

  • Bake for 20 minutes, or until the jalapeños are tender and the filling is hot and lightly golden.

Serve

  • Remove from the oven and allow to cool slightly before serving.
