Ingredients

  • 4 c shredded chicken
  • 2 tbsp olive oil
  • 1 c onion chopped
  • 1 medium cabbage chopped
  • 1 red bell pepper thinly sliced
  • 1 jalapeno deseeded and finely chopped
  • 2 tsp garam masala
  • Salt and pepper to taste

Instructions

Heat the oil.

  • In a large skillet, heat the olive oil over medium-high heat.

Cook the onion.

  • Add the chopped onion to the skillet and saute until it begins to soften.

Add the peppers.

  • Add the sliced red bell pepper and chopped jalapeno. Saute until the bell pepper starts to become tender.

Add the chicken and cabbage.

  • Add the shredded chicken and chopped cabbage to the skillet. Toss well to combine all ingredients evenly.

Cook until the cabbage softens.

  • Continue cooking until the cabbage begins to soften.

Season the stir fry.

  • Sprinkle the garam masala over the mixture and season with salt and pepper to taste. Stir well to distribute the seasoning evenly.

Finish cooking.

  • Cover the skillet and continue to cook over medium heat until the cabbage is tender and cooked to your preferred texture.
