Instructions
Preheat the oven.
Preheat the oven to 325°F.
Prepare the pie crust.
Place the 9-inch pie crust into a pie plate if it is not already prepared. Crimp the edges, if desired.
Cream the butter and sugar.
In the bowl of a stand mixer, or in a large mixing bowl using a hand mixer, beat the softened butter and granulated sugar together until combined.
Add the remaining filling ingredients.
Add the eggs, vanilla extract, yellow cornmeal, salt, whole milk, and white vinegar to the butter mixture.
Mix the filling.
Beat the mixture until smooth and fully combined. Scrape down the sides of the bowl as needed to ensure even mixing.
Fill the pie shell.
Pour the prepared filling into the 9-inch pie crust. Spread evenly if needed.
Bake the pie.
Bake in the preheated oven at 325°F for 55 to 65 minutes, or until the top is golden and the center is mostly set with a slight jiggle.
Protect the crust if necessary.
Monitor the pie crust edges during baking. If the edges begin to brown too quickly, cover them with strips of aluminum foil or use a pie shield.
Cool the pie.
Remove the pie from the oven and place it on a wire rack. Allow it to cool at room temperature for 1 hour before slicing.
Serve.
Slice and serve plain, or with whipped cream, fresh berries, or vanilla ice cream if desired.
