Ingredients

  • 1 package dark chocolate Oreo cookies about 32 cookies
  • 1 8- oz package cream cheese softened
  • 1/4 c granulated sugar
  • 1/2 tsp almond extract
  • 1/2 c milk
  • 1 16- oz container Cool Whip divided
  • 1 large can cherry pie filling divided

Instructions

Prepare the cream cheese mixture.

  • In a large mixing bowl, combine the softened cream cheese, granulated sugar, and almond extract. Mix until smooth and fully combined.

Add the cherry filling.

  • Add 1 c of cherry pie filling to the cream cheese mixture. Stir until evenly incorporated.

Fold in the whipped topping.

  • Gently fold 3 c of Cool Whip into the cream cheese and cherry mixture until smooth and evenly combined.

Prepare the baking dish.

  • Spread 2 tbsp of the remaining Cool Whip evenly across the bottom of an 8 x 8-inch baking dish.

Create the first cookie layer.

  • Dip 16 Oreo cookies briefly in milk, one at a time. Arrange the dipped cookies in a single layer over the Cool Whip in the baking dish.

Add the first filling layer.

  • Spread half of the cream cheese mixture evenly over the Oreo layer.

Create the second cookie layer.

  • Dip the remaining 16 Oreo cookies briefly in milk. Arrange them in a single layer over the cream cheese mixture.

Add the remaining filling.

  • Spread the remaining cream cheese mixture evenly over the second Oreo layer.

Add the topping.

  • Spread the remaining Cool Whip evenly over the top of the dessert.

Chill the dessert.

  • Cover the baking dish and refrigerate for at least 6 hours, or overnight, until the cookies soften and the layers are set.

Garnish and serve.

  • Before serving, spoon the remaining cherry pie filling over the top. Slice into squares and serve chilled.

Notes

To make this Cherry Oreo Icebox Cake gluten free, use certified gluten-free chocolate sandwich cookies in place of Oreo cookies.
