Preheat the oven to 375°F.
Lightly coat a 9x13-inch baking dish with nonstick cooking spray.
Place the boneless, skinless chicken breasts in a single layer in the prepared baking dish.
In a small bowl, combine the salt, black pepper, garlic powder, and Italian seasoning.
Sprinkle a small amount of the seasoning mixture evenly over the chicken breasts.
Arrange the provolone cheese slices over the seasoned chicken breasts, using 8 slices total.
In a medium mixing bowl, combine the remaining seasoning mixture with the mayonnaise, sour cream, and Parmesan cheese.
Stir until the mixture is smooth, creamy, and evenly blended.
Spread the mayonnaise, sour cream, and Parmesan mixture evenly over the provolone-topped chicken breasts.
Place the baking dish in the preheated oven.
Bake for 45 minutes to 1 hour, or until the chicken is fully cooked.
Check the internal temperature of the chicken with a meat thermometer. The chicken is done when the thickest part reaches 165°F.
Remove the baking dish from the oven.
Allow the chicken to rest for 5 minutes before serving.
Serve warm with the preferred side dishes.
