Ingredients

  • 10 to 12 mild Italian sausages sliced into bite-sized pieces
  • 1 yellow bell pepper cut into bite-sized chunks
  • 1 green bell pepper cut into bite-sized chunks
  • 1 red bell pepper cut into bite-sized chunks
  • 1 yellow onion cut into bite-sized pieces
  • 1 c fresh mozzarella cheese shredded
  • 1 c cheddar cheese freshly shredded
  • ½ tbsp olive oil
  • Salt and black pepper to taste
  • Nonstick cooking spray for preparing the baking dish

Instructions

Step 1: Prepare the Baking Dish

  • Preheat the oven to 350°F.
  • Lightly coat a baking dish with nonstick cooking spray to prevent sticking and to make cleanup easier.

Step 2: Prepare the Sausage and Vegetables

  • Slice the Italian sausages into bite-sized pieces.
  • Cut the yellow, green, and red bell peppers into bite-sized chunks. Cut the yellow onion into similar-sized pieces to ensure even cooking.

Step 3: Combine the Ingredients

  • Place the sliced sausage, bell peppers, and onion into the prepared baking dish.
  • Drizzle the olive oil over the mixture. Season with salt and black pepper to taste.
  • Toss all ingredients together until the sausage and vegetables are evenly coated with the olive oil and seasoning.

Step 4: Add the First Layer of Cheese

  • Sprinkle half of the shredded mozzarella cheese and half of the shredded cheddar cheese evenly over the sausage and vegetable mixture.

Step 5: Bake

  • Place the baking dish in the preheated oven.
  • Bake for 25 to 30 minutes, or until the peppers are tender and the sausage is fully cooked through.

Step 6: Add the Remaining Cheese

  • Remove the baking dish from the oven.
  • Sprinkle the remaining mozzarella and cheddar cheese evenly over the top.
  • Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is fully melted and beginning to brown.

Step 7: Check and Serve

  • Ensure that the sausage is fully cooked and no longer pink in the center. The peppers should be tender, and the cheese should be melted and lightly browned.
  • Allow the dish to rest for a few minutes before serving. Serve warm with your preferred sides.
