Dice the boneless, skinless chicken breast into small, even cubes.
Place the diced chicken in a large mixing bowl.
Add the egg, shredded mozzarella cheese, shredded cheddar cheese, all-purpose flour, parsley, dried dill, smoked paprika, onion powder, garlic powder, salt, and black pepper.
Stir until all ingredients are thoroughly combined and the chicken is evenly coated.
Heat the olive oil in a large skillet over medium to medium-high heat.
Scoop the chicken mixture into the skillet in heaping 1-tbsp portions.
Gently flatten each portion into a small patty shape using the back of a spoon or a spatula.
Cook the fritters for approximately 3 minutes on the first side, or until the bottoms are golden brown.
Carefully flip the fritters.
Cook for an additional 3 minutes on the second side, or until golden brown and fully cooked through.
If the skillet is not large enough to hold all fritters comfortably, cook them in batches to avoid overcrowding.
Check for doneness by cutting into one fritter. The chicken should be fully cooked and no longer pink in the center.
If using a meat thermometer, the internal temperature should reach 165°F.
Transfer the cooked fritters to a plate.
If desired, place the fritters on paper towels to remove excess oil.
Serve immediately while hot with preferred dips, sauces, sides, or slider buns.
