Ingredients

  • 1 1/2 lb boneless, skinless chicken breast diced into small cubes
  • 1 large egg
  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup all-purpose flour
  • 1 tsp dried parsley or 1 tbsp fresh parsley finely minced
  • 1/2 tsp dried dill
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/2 tsp freshly ground black pepper or to taste
  • 2 tbsp olive oil

Instructions

  • Dice the boneless, skinless chicken breast into small, even cubes.
  • Place the diced chicken in a large mixing bowl.
  • Add the egg, shredded mozzarella cheese, shredded cheddar cheese, all-purpose flour, parsley, dried dill, smoked paprika, onion powder, garlic powder, salt, and black pepper.
  • Stir until all ingredients are thoroughly combined and the chicken is evenly coated.
  • Heat the olive oil in a large skillet over medium to medium-high heat.
  • Scoop the chicken mixture into the skillet in heaping 1-tbsp portions.
  • Gently flatten each portion into a small patty shape using the back of a spoon or a spatula.
  • Cook the fritters for approximately 3 minutes on the first side, or until the bottoms are golden brown.
  • Carefully flip the fritters.
  • Cook for an additional 3 minutes on the second side, or until golden brown and fully cooked through.
  • If the skillet is not large enough to hold all fritters comfortably, cook them in batches to avoid overcrowding.
  • Check for doneness by cutting into one fritter. The chicken should be fully cooked and no longer pink in the center.
  • If using a meat thermometer, the internal temperature should reach 165°F.
  • Transfer the cooked fritters to a plate.
  • If desired, place the fritters on paper towels to remove excess oil.
  • Serve immediately while hot with preferred dips, sauces, sides, or slider buns.

Notes

To make these Cheesy Chicken Fritters gluten free, replace the all-purpose flour with a certified gluten-free 1:1 baking flour blend.
Confirm that the mozzarella cheese, cheddar cheese, dried herbs, smoked paprika, onion powder, garlic powder, salt, and black pepper are labeled gluten free.
