Ingredients

Casserole

  • 3 c cabbage shredded
  • 2 c cauliflower florets
  • 1/2 yellow onion diced
  • 4 large eggs
  • 1/2 c ricotta cheese
  • 1/4 c sour cream
  • 1 c mozzarella cheese shredded
  • 1 c cheddar cheese shredded
  • 1/2 tsp cornstarch
  • 1/4 c all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tbsp fresh thyme chopped
  • 1 tsp garlic powder
  • 2 tsp kosher salt divided
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Cooking spray for greasing the baking dish

Instructions

Preheat the oven.

  • Preheat the oven to 375°F.

Prepare the baking dish.

  • Grease a 9-inch round baking dish with cooking spray and set aside.

Sauté the onion.

  • Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté until just softened.

Add the cabbage.

  • Add the shredded cabbage and 1 tsp kosher salt to the skillet. Toss to combine and sauté for 1 minute.

Transfer to the baking dish.

  • Transfer the cabbage and onion mixture to the prepared baking dish and spread evenly.

Prepare the egg mixture.

  • In a medium bowl, whisk together the eggs, ricotta cheese, sour cream, garlic powder, remaining 1 tsp kosher salt, and black pepper until combined.

Combine the dry ingredients.

  • In a small bowl, stir together the cornstarch, all-purpose flour, and baking powder.

Add dry ingredients to egg mixture.

  • Whisk the dry ingredients into the egg mixture until smooth.

Pour over the cabbage.

  • Pour the egg mixture evenly over the cabbage and onion in the baking dish.

Add the cauliflower.

  • Scatter the cauliflower florets evenly over the mixture.

Add the cheese and thyme.

  • Top with shredded mozzarella and shredded cheddar. Sprinkle the chopped thyme evenly over the cheese.

Bake the casserole.

  • Bake on the center rack for 35 minutes, or until the top begins to turn golden brown and the center is set.

Cool before serving.

  • Remove from the oven and allow the casserole to cool for 5 minutes before serving.
