Instructions
Prep & Pound
Preheat oven to 375°F (190°C). Lightly grease a baking dish or line a baking sheet with parchment.
If chicken breasts are thick, pound them gently to even thickness.
Make the Filling
In a bowl, combine softened cream cheese, chopped bacon, a pinch of salt/pepper, garlic powder, and onion powder (if using).
Mix until fully incorporated.
Slice & Fill
Carefully slice each chicken breast horizontally to create a pocket.
Spoon the cream cheese-bacon mixture into each pocket.
Use toothpicks if needed to secure the edges.
Coat with Doritos
Beat the eggs in a shallow bowl.
Place crushed Doritos in another bowl.
Dip each filled chicken breast into beaten eggs, then roll in Doritos crumbs. Press crumbs in firmly.
Bake
Arrange coated chicken in the prepared dish. Drizzle or brush a bit of olive oil/butter on top if desired.
Bake for about 25–30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Remove toothpicks before serving.
