Ingredients

  • Boneless Skinless Chicken Breasts: 4 pieces (~680 g / 1.5 lbs)
  • Cream Cheese: 170 g ~0.37 lb, softened
  • Cooked Bacon: about 6 slices chopped (~85 g / 0.19 lb)
  • Doritos Nacho Cheese flavor: ~150 g (~0.33 lb), crushed
  • Salt & Pepper: to taste
  • Garlic Powder: ½ tsp ~2.5 g
  • Onion Powder optional: ½ tsp (~2.5 g)
  • Eggs: 2 for dredging
  • Olive Oil or Melted Butter: 1–2 tbsp ~15–30 ml, optional (for brushing or drizzling if needed)
  • Feel free to add your favorite seasonings, like paprika or dried herbs, for an extra flavor boost.

Instructions

Prep & Pound

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish or line a baking sheet with parchment.
  • If chicken breasts are thick, pound them gently to even thickness.

Make the Filling

  • In a bowl, combine softened cream cheese, chopped bacon, a pinch of salt/pepper, garlic powder, and onion powder (if using).
  • Mix until fully incorporated.

Slice & Fill

  • Carefully slice each chicken breast horizontally to create a pocket.
  • Spoon the cream cheese-bacon mixture into each pocket.
  • Use toothpicks if needed to secure the edges.

Coat with Doritos

  • Beat the eggs in a shallow bowl.
  • Place crushed Doritos in another bowl.
  • Dip each filled chicken breast into beaten eggs, then roll in Doritos crumbs. Press crumbs in firmly.

Bake

  • Arrange coated chicken in the prepared dish. Drizzle or brush a bit of olive oil/butter on top if desired.
  • Bake for about 25–30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  • Remove toothpicks before serving.

Avoid Overstuffing: Too much filling can cause leakage. Keep it moderate for best results.
