Ingredients

Crust:

  • 2 c all-purpose flour
  • 1 c packed brown sugar
  • 1 c unsalted butter melted
  • 1/2 teaspoon salt

Filling:

  • 3 large eggs at room temperature
  • 1 can 14 ounces sweetened condensed milk
  • 1/2 c all-purpose flour
  • 1/4 c packed brown sugar
  • 1/4 c unsalted butter melted
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 3 c sweetened shredded coconut

Topping:

  • 1 c sweetened shredded coconut

Instructions

  • Preheat the oven. Prepare a baking dish by lining it with parchment paper ensuring that the edges hang over for removal later.
  • For the crust combine 2 cups of flour, 1 cup of sugar and 1/2 teaspoon of salt, in a bowl. Mix in 1 cup of butter until the mixture is well combined. Press this mixture into the pan.
  • Place the crust in the oven. Bake for approximately 12 to 15 minutes until it turns a golden brown color. Once done allow it to cool for 10 minutes. Don't forget to lower the temperature to 325°F (160°C).
  • While waiting for the crust to cool whisk together 3 eggs, 14 ounces of condensed milk, 1/2 cup of flour 1/4 cup of sugar 1/4 cup of butter 2 teaspoons of vanilla extract and 1/2 teaspoon of salt in a large bowl until you achieve a smooth consistency. Gently fold in 3 cups of coconut.
  • Pour this filling mixture over the crust. Evenly sprinkle an additional one cup of shredded coconut on top. Bake at the reduced temperature, for 25 to 30 minutes. Until you notice a golden brown color developing on top.
  • Enjoy your treat! Allow the bars to cool down entirely within the pan on a wire rack. Once they have cooled, utilize the edges of the parchment paper to lift the concoction out of the pan. Proceed to cut it into squares and relish in its deliciousness!

Notes
