Stir the mixture until smooth and evenly blended.

Sprinkle the shredded mozzarella cheese or mild cheddar cheese over the prepared half of the tortilla.
Arrange the blueberries evenly over the cheese.
Fold the tortilla in half to cover the filling.
Press the folded tortilla gently to help secure the filling.
Place a nonstick skillet over medium heat.
Add the butter or coconut oil to the skillet and allow it to melt.
Place the folded quesadilla in the skillet.
Cook for 2 to 3 minutes on the first side, or until the tortilla is golden brown and crisp.
Carefully flip the quesadilla using a spatula.
Cook for an additional 2 to 3 minutes on the second side, or until the tortilla is golden brown and the filling is warmed through.
Remove the quesadilla from the skillet.
Allow it to rest for 1 minute before slicing.
Cut the quesadilla into triangles.
Dust with powdered sugar or drizzle with additional honey, if desired.
Serve warm with yogurt, fresh fruit, or whipped cream.
