Ingredients

  • 1 large tortilla whole wheat, white, or gluten-free
  • 1/2 cup fresh or frozen blueberries
  • 1 tbsp cream cheese or Greek yogurt
  • 1 tsp honey or maple syrup
  • 1/4 tsp cinnamon optional
  • 1/4 cup shredded mozzarella cheese or mild cheddar cheese
  • 1 tsp butter or coconut oil for cooking
  • Powdered sugar or additional honey for topping, optional

Instructions

  • In a small mixing bowl, combine the cream cheese or Greek yogurt with the honey or maple syrup.
  • Add the cinnamon, if using.
  • Stir the mixture until smooth and evenly blended.
  • Place the tortilla on a clean, flat surface.
  • Spread the cream cheese or Greek yogurt mixture evenly over one half of the tortilla.
  • Sprinkle the shredded mozzarella cheese or mild cheddar cheese over the prepared half of the tortilla.
  • Arrange the blueberries evenly over the cheese.
  • Fold the tortilla in half to cover the filling.
  • Press the folded tortilla gently to help secure the filling.
  • Place a nonstick skillet over medium heat.
  • Add the butter or coconut oil to the skillet and allow it to melt.
  • Place the folded quesadilla in the skillet.
  • Cook for 2 to 3 minutes on the first side, or until the tortilla is golden brown and crisp.
  • Carefully flip the quesadilla using a spatula.
  • Cook for an additional 2 to 3 minutes on the second side, or until the tortilla is golden brown and the filling is warmed through.
  • Remove the quesadilla from the skillet.
  • Allow it to rest for 1 minute before slicing.
  • Cut the quesadilla into triangles.
  • Dust with powdered sugar or drizzle with additional honey, if desired.
  • Serve warm with yogurt, fresh fruit, or whipped cream.

Notes

To make this Blueberry Breakfast Quesadilla gluten free, use a certified gluten-free tortilla.
Choose a gluten-free tortilla that is soft and flexible enough to fold without cracking.
