Ingredients

  • 2 lb sirloin tips cubed
  • 1/2 yellow onion finely chopped
  • Salt to taste
  • Ground black pepper to taste
  • 2 cans condensed cream of mushroom soup
  • 1 cup heavy whipping cream
  • 1/2 cup red wine vinegar
  • 1 package beef with onion soup mix
  • 1 package egg noodles
  • 1 tbsp butter

Instructions

  • Place a deep cast-iron skillet or heavy-bottomed skillet on the stove over medium heat.
  • Add the butter to the skillet and allow it to melt completely.
  • Add the cubed sirloin tips and finely chopped yellow onion to the skillet.
  • Season the beef and onion with salt and ground black pepper to taste.
  • Cook for approximately 5 minutes, stirring occasionally, until the beef is browned on the outside and the onion is translucent.
  • In a medium mixing bowl, combine the condensed cream of mushroom soup, heavy whipping cream, red wine vinegar, and beef with onion soup mix.
  • Stir thoroughly until the sauce mixture is smooth and fully combined.
  • Pour the sauce mixture into the skillet with the beef and onion.
  • Stir until the beef tips are completely coated with the creamy gravy mixture.
  • Reduce the heat to medium-low.
  • Cook for 2 hours, stirring occasionally to prevent the sauce from sticking to the bottom of the skillet.
  • Reduce the heat to low.
  • Continue cooking for an additional 4 hours, or until the beef tips are very tender and fall apart easily.
  • If the sauce becomes too thick during cooking, add a small amount of broth, cream, or water as needed to maintain the desired consistency.
  • Near the end of the beef cooking time, place a large pot of salted water on the stove over high heat.
  • Bring the water to a boil.
  • Add the egg noodles to the boiling water.
  • Cook the egg noodles for approximately 5 minutes, or until al dente, following package directions as needed.
  • Drain the cooked egg noodles.
  • Rinse the noodles under cold water, if desired, to stop the cooking process and prevent sticking.
  • Place the egg noodles on serving plates or in bowls.
  • Spoon the beef tips and creamy gravy over the noodles.
  • Serve warm.
