Line two baking trays with baking paper or silicone baking mats.
Remove the puff pastry sheets from the freezer.
Separate the pastry sheets and allow them to partially thaw until pliable but still cold.
Using a round cookie cutter or wide-mouth mug, cut 4 rounds from each puff pastry sheet.
Place the pastry rounds on a clean work surface.
Spoon approximately 1 tablespoon of savoury mince into the center of each pastry round.
Brush the edges of each pastry round lightly with the whisked egg.
Fold each pastry round in half to form a semi-circle.
Press the edges together firmly to seal the filling inside.
Crimp the sealed edges with your fingers or a fork to secure each pasty.
Transfer the pasties to the prepared baking trays, placing them upright and leaving space between each one.
Brush the tops with additional egg wash if a more golden finish is desired.
Bake for 20 minutes, or until the pasties are golden, puffed, and cooked through.
Remove the trays from the oven.
Allow the pasties to cool slightly before serving, as the filling will be hot.
