Ingredients

  • 1 lb lean ground beef
  • 1 medium onion diced
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • Salt to taste
  • Black pepper to taste
  • 2 tsp Italian seasoning
  • 12 oz egg noodles cooked according to package directions
  • 1 can tomato sauce 16 oz
  • 2 c shredded cheddar cheese
  • Fresh parsley chopped, for garnish

Instructions

  • Cook the egg noodles according to the package directions.
  • Rinse and drain the noodles well, then set them aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the lean ground beef, diced onion, and minced garlic to the skillet.
  • Cook until the ground beef is fully browned and the onion is softened.
  • Drain any excess grease, if necessary.
  • Sprinkle the beef mixture with Italian seasoning.
  • Add the tomato sauce to the skillet.
  • Season with salt and black pepper to taste.
  • Stir until the beef mixture is evenly coated with the sauce.
  • Add the cooked egg noodles to the beef mixture.
  • Stir until the noodles and beef mixture are fully combined.
  • Lightly grease a casserole dish.
  • Transfer the beef and noodle mixture into the prepared casserole dish.
  • Spread the mixture evenly.
  • Preheat the oven to 400°F.
  • Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  • Bake for 15 minutes, or until the cheese is completely melted and the casserole is heated through.
  • Remove the casserole from the oven.
  • Sprinkle with freshly chopped parsley before serving.
  • Serve warm.

Notes

To make this Beef Noodle Casserole gluten free, replace the regular egg noodles with certified gluten-free noodles. Choose a sturdy gluten-free pasta, such as rice, corn, or chickpea-based pasta, so it holds its shape after baking.
Also verify that the tomato sauce, Italian seasoning, shredded cheese, and any packaged ingredients are labeled gluten free. Plain ground beef, onion, garlic, olive oil, salt, pepper, and fresh parsley are naturally gluten free, but packaged seasonings and sauces should always be checked for gluten-containing additives or cross-contact.
For best results, cook the gluten-free noodles just until al dente, since they can soften more quickly than regular pasta during baking.
