Ingredients

Rice

  • 1 cup uncooked white long grain rice
  • 2 cups chicken broth

Sauce

  • 1/4 cup soy sauce
  • 1/4 cup beef broth
  • 1 tbsp honey or brown sugar
  • 1 tsp hot sauce
  • 1/2 tsp sesame oil optional
  • 1/8 tsp ground ginger

Stir Fry

  • 3/4 lb strip steak skirt steak, flank steak, or sirloin
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp butter
  • 2 eggs well whisked
  • 1 to 2 tbsp peanut oil or olive oil or canola oil
  • 1/2 cup dry white wine
  • 3 cloves garlic minced
  • 1 small yellow onion finely diced
  • 3/4 cup frozen peas
  • 3/4 cup frozen carrots
  • 3 to 4 green onions diced

Instructions

Prepare the Rice

  • Add the chicken broth to a medium saucepan or Dutch oven and bring it to a boil.
  • Add the uncooked white long grain rice and ensure the rice is fully submerged in the liquid.
  • Return the mixture to a boil.
  • Cover the pot with a tight-fitting lid.
  • Reduce the heat to a gentle simmer.
  • Cook the rice for 15 minutes.
  • After 15 minutes, lift the lid and check the liquid level.
  • If the liquid has been fully absorbed, remove the rice from the heat. If liquid remains, continue cooking for an additional 5 minutes, or until absorbed.
  • Spread the cooked rice evenly onto a tray.
  • Transfer the tray to the refrigerator and allow the rice to cool completely. For best results, refrigerate the rice overnight in an airtight container.

Prepare the Sauce and Beef

  • In a small bowl, combine the soy sauce, beef broth, honey, hot sauce, sesame oil, and ground ginger.
  • Stir until fully combined and set aside.
  • Place plastic wrap over the beef.
  • Use a meat tenderizer to pound the beef on both sides until slightly tenderized.
  • Trim away any large pieces of fat.
  • Slice the beef thinly against the grain.
  • Cut the strips into smaller pieces, about 1 1/2 inches long.
  • Transfer the sliced beef to a bowl.
  • Add 2 tablespoons of the prepared sauce mixture to the beef.
  • Toss until the beef is evenly coated.
  • Set the beef aside while preparing the remaining ingredients.

Prepare the Eggs

  • Melt the butter in a small nonstick skillet over medium-low heat.
  • Add the well-whisked eggs.
  • Cook, stirring gently, until the eggs are just cooked through.
  • Remove the scrambled eggs from the skillet and set aside.

Prepare the Fried Rice

  • Add the peanut oil to a wide skillet over medium-high heat.
  • Season the marinated beef lightly with salt and black pepper.
  • Add the beef to the skillet in an even layer.
  • Cook for 3 to 4 minutes per side, or until seared and fully cooked.
  • Remove the beef from the skillet and set aside.
  • Reduce the heat to medium.
  • Add the dry white wine to the skillet.
  • Use a silicone spatula to scrape the bottom and sides of the skillet, loosening any browned bits.
  • Allow the wine to reduce by half, about 3 to 4 minutes.
  • Add the finely diced onion and minced garlic to the skillet.
  • Cook for 2 to 3 minutes, or until softened and fragrant.
  • Add the frozen peas and frozen carrots.
  • Cook for 1 minute, stirring occasionally.
  • Add the chilled rice and the remaining sauce mixture to the skillet.
  • Increase the heat to medium-high.
  • Toss continuously for about 3 minutes, or until the rice is evenly coated, browned by the sauce, and most of the liquid has been absorbed.
  • Reduce the heat to medium.
  • Add the cooked beef, scrambled eggs, and diced green onions.
  • Toss until all ingredients are evenly combined and heated through.
  • Remove from the heat.
  • Serve immediately while hot.
