BBQ Chicken Flatbread is a quick baked flatbread made with BBQ sauce, garlic, cooked chicken, Gouda cheese, red onion, sweet corn, and fresh cilantro.

Ingredients

  • 1 cup BBQ sauce plus additional sauce for serving
  • 4 garlic cloves minced or pressed
  • 2 cups diced cooked chicken such as rotisserie or leftover chicken
  • 14 –15 oz store-bought prepared flatbread or naan bread
  • 2 cups shredded Gouda cheese
  • 1 small red onion halved and thinly sliced
  • ½ cup fresh sweet corn
  • ½ cup chopped fresh cilantro
  • Red pepper flakes optional

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper and set it aside.
  • In a small bowl, combine the BBQ sauce and minced garlic. Stir until fully incorporated.
  • Place the diced cooked chicken in a separate bowl. Add ¼ cup of the prepared BBQ sauce mixture and toss until the chicken is evenly coated. Taste and season lightly with salt and pepper, if needed.
  • Place the flatbread or naan bread on the prepared baking sheet.
  • Brush the remaining BBQ sauce mixture evenly over the surface of the flatbread.
  • Sprinkle the shredded Gouda cheese evenly over the sauced flatbread.
  • Arrange the sliced red onion, BBQ-coated chicken, and sweet corn evenly over the cheese.
  • Bake for 10 to 12 minutes, or until the cheese is melted and the edges of the flatbread are golden and crisp.
  • Remove the flatbread from the oven and allow it to rest for approximately 5 minutes before slicing.
  • Before serving, drizzle with additional BBQ sauce. Garnish with chopped fresh cilantro and red pepper flakes, if desired.
  • Slice the flatbread into portions and serve warm.

Notes

To make this recipe gluten free, use a certified gluten-free flatbread, naan, or pizza crust. Verify that the BBQ sauce, cooked chicken, Gouda cheese, red pepper flakes, and all packaged ingredients are certified gluten free. If using rotisserie chicken, check the label carefully, as some seasonings or marinades may contain gluten. Prepare the flatbread on a clean baking sheet with fresh parchment paper to prevent cross-contact.
