Preheat the oven to 425°F / 220°C.
Remove the chicken thighs from the refrigerator and allow them to sit at room temperature briefly while the oven preheats.
Pat the chicken thighs thoroughly dry with paper towels, paying particular attention to the skin.
In a small bowl, combine the garlic powder, onion powder, paprika, dried oregano, dried thyme, kosher salt, and freshly ground black pepper.
Stir until the seasoning mixture is evenly combined.
Place the chicken thighs in a large mixing bowl.
Add the extra virgin olive oil and approximately 2/3 of the seasoning mixture.
Using clean hands or tongs, coat the chicken thighs evenly with the oil and seasoning.
Rub the seasoning over all sides of each chicken thigh.
Gently lift the skin where possible and apply some seasoning underneath for added flavor.
Place a wire rack on top of a rimmed baking sheet.
Arrange the seasoned chicken thighs on the rack, skin-side up.
Leave space between each piece to allow heat to circulate evenly.
Sprinkle the remaining seasoning mixture over the tops of the chicken thighs.
Bake for 35 to 40 minutes, or until the chicken is golden, crisp, and fully cooked.
Check the internal temperature with a meat thermometer inserted into the thickest part of the thigh, avoiding the bone.
The chicken is ready when it reaches an internal temperature of 170°F.
For extra crisp skin, turn on the broiler for 2 to 3 minutes at the end of baking.
Watch closely while broiling to prevent burning.
Remove the chicken from the oven.
Allow the chicken to rest for 5 minutes before serving.
Serve warm with preferred side dishes.
