Ingredients

  • 2 large avocados
  • 1 1/4 cups shredded cooked chicken more or less as needed
  • 1/3 cup chopped green onions
  • 1/4 cup bacon pieces
  • 3 oz cream cheese softened
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F.
  • Lightly grease a baking dish and set it aside.
  • Slice the avocados in half lengthwise.
  • Remove and discard the pits.
  • Using a spoon, carefully scoop the avocado flesh from each half, keeping the avocado shells intact.
  • Transfer the avocado flesh to a mixing bowl.
  • Mash the avocado with the back of a fork until mostly smooth.
  • Add the shredded chicken, chopped green onions, bacon pieces, softened cream cheese, chili powder, cumin, salt, and black pepper to the bowl.
  • Mix until the ingredients are evenly combined and the filling is creamy.
  • Divide the chicken and avocado filling evenly among the empty avocado shells.
  • Place the filled avocado shells into the prepared baking dish.
  • Sprinkle the shredded cheddar cheese evenly over the tops of the filled avocados.
  • Transfer the baking dish to the preheated oven.
  • Bake for 15 to 20 minutes, or until the filling is heated through and the cheese is melted.
  • Remove the baking dish from the oven.
  • Allow the baked avocados to rest for several minutes before serving.
  • Serve warm.
