Ingredients

Cake Batter

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • cups granulated sugar
  • ½ cup unsalted butter 1 stick, melted
  • 1 cup sour cream
  • 3 large eggs lightly beaten
  • 2 teaspoons vanilla extract
  • 2 medium Granny Smith apples peeled, cored, and finely diced

Crumble Topping

  • ¾ cup all-purpose flour
  • ¾ cup packed light brown sugar
  • 1 cup chopped pecans
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter 1 stick, melted

Glaze

  • cup packed light brown sugar
  • 2 tablespoons apple cider
  • 2 tablespoons unsalted butter

Instructions

Prepare the Oven and Pan

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.

Combine Dry Ingredients

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and granulated sugar until evenly combined.

Prepare the Cake Batter

  • Add the melted butter, sour cream, eggs, and vanilla extract to the dry ingredients. Stir until the batter is smooth and fully incorporated. Pour the batter into the prepared pan and spread evenly.

Add the Apples

  • Evenly sprinkle the diced apples over the surface of the batter. Do not press them into the batter.

Prepare the Crumble Topping

  • In a medium bowl, combine the flour, brown sugar, pecans, cinnamon, and salt. Stir in the melted butter until the mixture is thoroughly combined and crumbly. Sprinkle the topping evenly over the apples.

Bake

  • Bake for 40–45 minutes, or until a toothpick inserted into the center of the cake comes out clean and the topping is golden brown.

Prepare the Glaze

  • While the cake is baking, combine the brown sugar, apple cider, and butter in a small saucepan. Cook over medium heat, stirring occasionally, until the butter and sugar are fully melted and the glaze is smooth.

Finish and Serve

  • Remove the cake from the oven and drizzle the warm glaze evenly over the top. Allow the cake to cool slightly before slicing. Serve warm or at room temperature.

To make Apple Crumble Coffee Cake gluten free, substitute the all-purpose flour in both the cake and crumble topping with a certified 1:1 gluten-free baking flour blend that contains xanthan gum.
