Ingredients

  • 1 tablespoon salted butter melted
  • 1/2 pound bacon cooked and crumbled or sliced
  • 1 c packed baby spinach roughly chopped
  • 1/2 c red bell pepper diced
  • 3 medium green onions chopped
  • 1 c shredded sharp cheddar cheese divided use (or a mix of your favorite cheese)
  • 12 large eggs
  • 1/2 c light cream or whole milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon onion powder
  • A few dashes hot sauce optional

Instructions

  • Begin by preheating your oven to 350°F.
  • Take a 15x10-inch jelly roll pan. Apply cooking spray, to it. Then, brush it with butter.
  • Evenly scatter the bacon, chopped spinach, diced red bell pepper, green onions and half of the cheese across the pan.
  • In a bowl beat together the eggs with cream (or milk) salt, pepper, garlic powder, onion powder and hot sauce (if desired) until they are well combined.
  • Carefully pour the egg mixture over all of the ingredients in the pan. Sprinkle the remaining cheese on top.
  • Place the pan in your oven. Bake for 20 minutes. To check if it is set properly gently shake the pan. If it still appears wobbly bake for 5 minutes or until set. For a top layer broil for a few minutes.
  • Finished baking slice up your omelet into squares. It can be enjoyed on its own or alongside some of your sides like biscuits or toast.
  • Storage Tips: Any leftovers can be stored in an airtight container in your refrigerator for, up to 5 days. When ready to enjoy for breakfast simply reheat them quickly in a microwave.
