Preheat the oven to 350°F.
Line a baking sheet with parchment paper, if desired.
Cut the brie cheese into small pieces and set aside.
Unroll the crescent roll dough.
Separate the dough into individual triangles.
Place the crescent dough triangles on a clean work surface.
Place 2 thin apple slices at the wide end of each dough triangle.
Place a small piece of brie cheese on top of the apple slices.
Starting at the wide end, roll each crescent triangle toward the pointed end, enclosing the apple and brie inside.
Place the rolls on the prepared baking sheet, with the pointed end facing down.
Bake for 10 to 12 minutes, or until the crescent rolls are golden brown and fully baked.
Remove the rolls from the oven.
Allow them to cool for 1 to 2 minutes.
Drizzle the warm rolls with honey.
Serve warm.
