Ingredients

For the Loaf:

  • 1 1/2 c + 1 tbsp all-purpose flour divided
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 c plain whole-milk yogurt
  • 1 c sugar
  • 3 large eggs
  • 2 tsp grated orange zest
  • 1/2 tsp pure vanilla extract
  • 1/2 c vegetable oil
  • 1 1/2 c cranberries fresh or frozen, thawed and rinsed

For the Orange Syrup:

  • 1/3 c freshly squeezed orange juice
  • 1/3 c sugar

For the Orange Glaze:

  • 1 c confectioners’ sugar sifted
  • 2 to 3 tbsp fresh orange juice

Instructions

Preheat Oven & Prepare Pan:

  • Heat your oven to 350°F (175°C).
  • Grease and flour a 9 x 5-inch loaf pan.

Mix Dry Ingredients:

  • In a medium bowl. Sift together 1 1/2 cups flour, baking powder, and salt.

Mix Wet Ingredients:

  • In a large bowl. Whisk yogurt, sugar, eggs, orange zest, vanilla, and oil. Until smooth.

Combine Wet and Dry Ingredients:

  • Gradually mix the dry ingredients. Into the wet ingredients. Until just combined.

Prepare Cranberries:

  • Toss the cranberries with 1 tablespoon flour. Then gently fold them into the batter.

Bake:

  • Pour the batter into the prepared pan.
  • Bake for 50 to 55 minutes. Or until a toothpick inserted into the center comes out mostly clean.
  • Let the loaf cool in the pan for 10 minutes. Then transfer to a wire rack.

Make Orange Syrup:

  • While the loaf cools. Combine orange juice and sugar. In a small saucepan.
  • Heat over medium. Until sugar dissolves. Then simmer for 3 minutes.
  • Poke holes in the warm loaf. And brush with syrup.

Glaze the Loaf:

  • Whisk confectioners' sugar with 2 to 3 tablespoons orange juice. To make a pourable glaze.
  • Drizzle over the completely cooled loaf.

Serve:

  • Allow the glaze to harden. For about 15 minutes. Before slicing and serving.
