  • 1 1/4 c warm water it will feel warm on your wrist
  • 1 tbsp sugar 12.5 grams
  • 1 tsp instant dry yeast 2.83 grams
  • 2 tbsp oil canola, vegetable, or neutral olive oil melted butter is fine too
  • 2 3/4 c all-purpose flour or bread flour plus up to 1/4 c extra
  • 1 tsp salt add extra pinch if using kosher salt
  • Cornmeal for dusting about 2-3 tbsp

Instructions

  • Start by preparing the yeast mixture. In a bowl combine water and sugar. Sprinkle the yeast on top. Allow it to foam for 10 minutes.
  • Next make the dough by adding oil, salt and incorporating flour into the yeast mixture until combined. Knead the dough, on a floured surface until it becomes smooth adding flour if needed to prevent stickiness.
  • Once the dough is ready place it in another bowl cover it up and let it rise in a spot until it doubles in size. This usually takes around 1 hour.
  • After the dough has risen knead it briefly. Divide it into 10 pieces. Roll each piece into discs. Flatten them slightly. Sprinkle some cornmeal on top of each disc. Let them puff up for 20 minutes on a baking sheet.
  • Now you can cook the muffins! Heat a pan over medium-low heat and lightly oil it. Cook the muffins, in batches by covering them with a lid for 9 minutes on one side. Then flip them over. Cook for 5 minutes or until they turn golden brown.
  • Once cooked transfer the muffins to a wire rack to cool for 10 to 15 minutes before serving.
